Good eats for your goodies…

There’s something liberating about letting go of breakfast’s rigid rules. You know, the ones that say you need to eat a bowl of cereal or choke down a bland smoothie because that’s what “morning people” do (contradictory side note – I love a good smoothies bowl and will share some of my faves later 😉). For me, breakfast became a whole lot more fun when I shifted my focus. Instead of being a slave to the same-old-same-old, I decided to prioritize feeling full and fueling up with enough protein to tackle the day. And honestly? It’s been a game-changer.

Trying to color inside the lines with my meals was never my strong suit. I’m more of a scribble-all-over-the-page kind of person, especially when it comes to food. But in my quest to find something that works, I stumbled upon something pretty fantastic. It’s a little unconventional, a lot satisfying, and it might just inspire you to break some food rules of your own.

Let me introduce you to my go-to breakfast (or lunch or dinner, depending on how rebellious I’m feeling): the Open Chicken Wrap. Spoiler alert: it’s not really a wrap. After a few too many battles with tortillas that just wouldn’t cooperate, I had an epiphany—why not dump all that goodness into a bowl? What started as a lazy solution turned into a delicious revelation.

Open Chicken Wrap: The Non-Wrap Wrap

Ingredients:

– A generous handful of fresh spinach (with a side of arugula or mixed greens if you’re feeling fancy)

– Crumbly, tangy feta cheese (because life’s too short for bland cheese)

– A heaping spoonful of pico de gallo (adds just the right amount of zing)

– 163-205g of grilled chicken seasoned to perfection with paprika, garlic powder, cinnamon, and, if you’re feeling adventurous, a dash of turmeric

– One protein tortilla (12g of protein for the win)

– And my secret, no-nutritional-value-but-totally-worth-it weapon: Bang Bang sauce 😎

Instructions:

1. Toss your greens into a big bowl. (You’ll need the extra space, trust me.)

2. Sprinkle on that feta like it’s confetti at a party—because breakfast should be celebrated.

3. Add the pico de gallo for a pop of color and a burst of flavor (I also add classic hummus if I’m feeling spicy).

4. Top with your perfectly grilled chicken. The seasoning combo may sound a little strange, but it’s pure magic.

5. Tear up that protein tortilla and scatter it like you’re making some kind of delicious treasure map.

6. Drizzle—or drown, I won’t judge—with bang bang sauce. It’s the final touch that brings everything together.

And there you have it—an Open Chicken Wrap that’s more like a salad that got a promotion. The best part? It’s easy, it’s filling, and it doesn’t take itself too seriously. Just like breakfast should be.

So, give it a try. Remix it, add your own twist, and see what happens when you stop following the rules and start following your taste buds. Your mornings (or afternoons, or evenings) will thank you. And who knows, you might just find yourself looking forward to breakfast again.

Happy Feel-Good Friday, friends. Here’s to eating well, feeling great, and enjoying every bite.
